Fressen Artisan Bakery

Portland, Oregon 2018

Fressen Artisan Bakery began as a Portland Farmer’s Market stall, with leased production space and the goal of owning its own building one day.

With both financial and physical building planning help from Constructive Form, they adapted a 3,000 SF former auto shop into a new home for their wholesale bakery, Viennese Kaffeehaus inspired café, and shop.

Our design places the café and retail functions on Glisan Street, using the building’s double height volume to create an open, airy public zone. We preserved the building’s existing openings, allowing daylight to pour into the entire space. An eight-foot partition wall separates the café and prep kitchen, creating a private work area while transferring light from the front of house to the kitchen, and allowing the sounds and smells of baking to flow into the café. New glazed operable doors provide flexible indoor/future outdoor seating.
